都流 — TORU

Two characters sit behind the name TORU: 都流 — craftsmanship in motion.

都流 — TORU

都 is the character found in 京都 — Kyoto — a place deeply associated with Japanese tradition, discipline, and craftsmanship. It represents the respect for a craft that is refined through patience, repetition, and generations of knowledge.

流 means flow — the movement of knowledge, technique, and ideas from one person to another. What is learned is not simply preserved, but carried forward and developed in its own time.

Together, 都流 represents craftsmanship in motion: respecting what came before, understanding the process, and intentionally shaping what comes next. That is the idea behind TORU.

Selection

We choose coffee based on what we taste and what we believe it can become — not simply its name, score, or reputation.

Roasting

Every coffee is developed specifically for its character and roasted on the Stronghold S7X, using the three-stage heat system to explore how each coffee responds and where its best expression lies.

Evaluation

We cup, taste, and review our coffees throughout the process. If a batch doesn't meet our standard, it doesn't leave TORU.

Respecting What Came Before Us.

Coffee begins long before it reaches a roaster. Behind every bag is a producer, a farm, a variety, a process, and years of work that we cannot replicate in the roasting room.

We work with selected producers and trusted partners across Indonesia and around the world, looking for coffees that have something distinctive to say. Our role is not to cover that up — it is to understand it, roast it carefully, and let it come through in the cup.

It Started With Craft.

TORU grew from an obsession with understanding why some cups stay with you. That started with matcha in Japan, where we became fascinated by the discipline behind something that can look so simple — the same movements, the same tools, the same attention, repeated for generations until technique becomes instinct.

Coffee took us somewhere different. In Melbourne, we were exposed to a deeper side of specialty coffee: roasting, extraction, competition, and the level of attention required to make a coffee truly perform. Over time, these experiences became less about copying what others were doing and more about developing our own standard. That became TORU.
